Vintage Summary
The 2022 growing season in Central Otago started out with adequate and timely rain, which allowed the vines to have a strong fruit set. This was then followed by a warm and dry ripening period, which brought about ideal conditions for the fruit to ripen and bring in some quality fruit. Our Babydoll Pinot Noir was harvested in excellent condition and the resulting wine is showing the wonderful characters that Central Otago is known for.
Winemaking
Pinot Noir parcels we individually harvested over a period of 10 days. The fruit was destemmed in the vineyard before it was delivered to the winery. A warm fermentation followed with regular cap movement, to help extract all the colour and flavours from the skins. Each parcel was tasted daily, and the wines were pressed off when the right balance of fruit and tannins have
been achieved. After aging with oak, the wine was then blended, stabilised, and bottled.
