The perfect celebration wine; pretty in pink, bubbly, light and refreshingly crisp.  Our Babydoll Sparkling is made from our award-winning Pinot Gris grapes blended with a dash of Merlot to create an attractive Blush colour.

Delicate with scented peachy, floral characters. The palate is brilliantly balanced with fine persistent bubbles, ripe red berry flavours and crisp, refreshing finish. Perfect with fresh sushi and sashimi. 

Marlborough is a fantastic region for realising the full potential of grape varieties.  With its mild springs, largely dry summers and consistently cool nights, we get this great extended growing season that means we can leave grapes on the vines until they reach their ideal ripeness.  

The Pinot Gris parcels were harvested separately, pressed and cold settled for 72 hours. The clear juice was racked off and each parcel of juice was fermented separately, with special Pinot Gris yeast strains used to develop varietal character. A long, cool fermentation took place over four weeks. The parcels were then blended with 1.5% Merlot to create the pink hue, then stabilised and filtered prior to bottling.

Very pale pink colour, the bubbles fine and moderately persistent.  The nose is soft and gentle with aromas of white stonefruits with a harmonious amalgam of honeysuckle and florals, with a suggestion of red fruits.  Dryish to taste and light-medium bodied, the palate has light stonefruit flavours with integrated nuances of honeysuckle and florals.  The palate has a rounded core with some presence, and the wine is softly textured with light acidity.  The effervescence is integrated, adding a little creaminess.  The wine carries to a stonefruit and honied finish with moderate length.  This is a light-fruited, dry, sparkling Pinot Gris with a soft, rounded and creamy mouthfeel.  Serve as an aperitif and with Asian fare over the next 2 years.
